A special issue from the Journal of Agricultural and Food Chemistry, ACS Food Science & Technology, and ACS Agricultural Science & Technology, highlights research in the field of sustainability-driven innovations for food waste upcycling.
The transition from a linear to a circular economy has emerged as one of the most promising strategies for addressing the environmental and economic challenges associated with food waste. In the article Waste is the Best: An Approach to Circular Economy, the authors discuss how the large volumes of by-products generated throughout the food supply chain should no longer be viewed as waste, but rather as valuable resources with significant potential for reuse. This perspective reflects a growing shift in food science, where sustainability is increasingly integrated into innovation and product development.
Food processing by-products are rich sources of compounds with high nutritional and functional value. Fruit and vegetable peels, cereal bran, oilseed meals, and brewing residues, among many others, contain dietary fibers, proteins, essential fatty acids, phenolic compounds, natural pigments, and antioxidants that can be recovered using modern extraction and bioprocessing technologies. Instead of being discarded or used only for low-value applications, these materials can be transformed into ingredients for functional foods, nutraceuticals, pharmaceuticals, cosmetics, and animal feed. Such approaches not only reduce environmental impacts but also contribute to maximizing the value obtained from agricultural resources.
Another important aspect is the role of technological innovation in enabling waste valorization. Advances in green extraction methods, fermentation, and biotechnology have significantly improved the efficiency of recovering valuable compounds while reducing energy consumption and the use of hazardous solvents. At the same time, the implementation of circular economy principles requires collaboration across multiple sectors, including researchers, food manufacturers, policymakers, and consumers. Supportive regulations, investments in sustainable technologies, and increased awareness are essential to facilitate the large-scale adoption of these practices.
Overall, food waste should be recognized as an untapped source of raw materials capable of generating environmental, economic, and social benefits. By promoting the recovery and reutilization of food processing residues, the circular economy offers an effective pathway toward more resilient and sustainable food systems. As global demand for food continues to increase alongside concerns about resource scarcity and climate change, waste valorization is likely to become an increasingly important component of future food production strategies.
